Okay, We needed cookies in the house and I thought that the Gigantoid Peanut Butter Cookie recipe from Vegan with a Vengeance was the one I went to all the time. I was wrong, but hey, cookies! I’d tell you which recipe but that would probably ruin a whole fluffy blog post that I pretty much need since I’m been so slack in writing. But lets focus on these cookies, because they are big and beautiful.
I’ve made these before, but I added chocolate chips this time. I kind of forgot to add the liquid until the last minute then just splashed some in so they turned out a bit dry. Don’t worry, even though they crumbled a bit I didn’t get one complaint. I started baking again so pretty much my friends and family like me again. Bonus: if you are going through a heatwave and have no A/C, the chocolate chips get kind of melty and nice on their own. I’m going to call that a good thing right now even though my house was 90 degrees inside when we had these.
